Ingredients

  • 600 g chicken thigh
  • 2 tbsp olive oil
  • 1 onion
  • 3 clove garlic
  • 1 tbsp ginger
  • 2 tbsp curry powder
  • 400 g canned tomatoes
  • 200 g spinach
  • salt — to taste
  • black pepper — to taste
  • 300 g brown rice
  • 600 ml water

    Cook the brown rice by bringing 600 ml of water to a boil, adding rice, reducing to a simmer, and cooking covered for 15 minutes or until water is absorbed.

    While the rice is cooking, dice the onion, mince the garlic, and grate the ginger.

    Heat olive oil in a large pan over medium heat. Add the diced onion and cook for 2-3 minutes until softened.
