- 1 cup green lentils
- 2 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons dijon mustard
- 3 tablespoons lemon juice
- 2 cloves garlic
- salt — to taste
- black pepper — to taste

Preheat oven to 400°F (200°C).

Rinse the green lentils thoroughly and place them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and set aside.

While the lentils cook, chop the red and yellow bell peppers and red onion into bite-sized pieces.

Place the chopped vegetables on a baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt and black pepper. Roast in the oven for 20 minutes until they are tender and lightly charred.
