Ingredients

- 2 chicken breast
- 8 flour tortilla
- 2 cups cheddar cheese
- 2 tablespoons olive oil
- 1 onion
- 1 red bell pepper
- 2 tablespoons taco seasoning
- salt — to taste
- black pepper — to taste
- 1 cup salsa
Instructions

Slice the chicken breast into thin strips.

Chop the onion and red bell pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the onion and red bell pepper, cooking until softened, about 3 minutes.

Add the chicken strips to the skillet along with taco seasoning, salt, and black pepper. Cook until the chicken is fully cooked, about 5-7 minutes.

Remove the chicken mixture from the skillet and set aside.

Wipe the skillet clean and reduce heat to medium-low. Add half a tablespoon of olive oil.
