  • 400 g canned white beans
  • 3 clove garlic
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • black pepper — to taste
  • 2 carrot
  • 2 celery stalk
  • 1 red bell pepper
  • 1 cucumber

    Preheat oven to 400°F (200°C).

    Peel the garlic cloves and place them on a piece of aluminum foil. Drizzle with 1 tablespoon of olive oil, wrap tightly, and roast in the oven for 15 minutes until soft.

    While garlic is roasting, drain and rinse the canned white beans.

    In a food processor, combine the white beans, roasted garlic, remaining 1 tablespoon of olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy.
