  • 400 g tempeh
  • 2 cups black beans
  • 4 cups vegetable broth
  • 1 can canned diced tomatoes
  • 1 onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • salt — to taste
  • black pepper — to taste
  • cilantro — to taste

Instructions

    Dice the onion and bell pepper. Mince the garlic.

    Heat olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper. Sauté for 3-4 minutes, until softened.
