Ingredients
For 4 servings
- 2 cups white rice
- 4 cups water
- 1 cup dried lentils
- 1 onion
- 1 carrot
- 1 cup frozen peas
- 2 cloves garlic
- 2 tablespoons vegetable oil
- 14 oz canned tomatoes
- 1 tablespoon curry powder
- salt — to taste
- pepper — to taste

Rinse the white rice under cold water until the water runs clear. In a medium pot, combine rice and 4 cups of water. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes, or until water is absorbed and rice is tender.

Meanwhile, rinse the dried lentils under cold water. In another pot, combine lentils with enough water to cover them by 1 inch. Bring to a boil, reduce heat, and simmer for 15 minutes or until tender. Drain any excess water.

While the rice and lentils are cooking, dice the onion and carrot. Mince the garlic.

In a large pan, heat vegetable oil over medium heat. Add onion and carrot, and sauté for 5 minutes until softened.

Add minced garlic and curry powder to the pan, and sauté for 1 minute until fragrant.

Stir in the canned tomatoes (including juice) and bring to a simmer.

Add cooked lentils and frozen peas to the tomato mixture. Season with salt and pepper. Cook for 5 minutes until the peas are heated through.
