Ingredients
For 4 servings
- 1 pound ground beef
- 4 flour tortilla
- 1 cup cheddar cheese
- 1 cup refried beans
- 2 tablespoon taco seasoning
- ⅓ cup water
- 1 tablespoon vegetable oil
Instructions
- 1
Heat a large nonstick skillet over medium-high heat. Add the ground beef and cook for 7–8 minutes, breaking it into small crumbles, until browned and cooked through, 160°F/71°C. Spoon off any excess fat.
- 2
Reduce the heat to medium. Stir in the taco seasoning, water and refried beans. Simmer for 3–4 minutes, stirring frequently, until the filling is hot and thick with no loose liquid. Remove from the heat.
- 3
Use four large, 10-inch flour tortillas. Warm them in the microwave for 20–30 seconds until flexible. Divide the beef filling between the tortillas, placing it just below the center and leaving the edges clear. Top each with ¼ cup shredded cheddar. Fold in the sides, then roll up tightly from the bottom.
- 4
Return the empty skillet to medium heat and add ½ tablespoon vegetable oil. Place two burritos seam-side down in the skillet. Cook for 2–3 minutes per side until crisp and golden, turning gently with a spatula. Repeat with the remaining ½ tablespoon oil and two burritos.
- 5
Let the burritos stand for 2 minutes before serving so the filling settles and the cheese stays tucked inside.
