Ingredients

For 4 servings

  • 2 sweet potatoes
  • 2 can canned tuna
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 green onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon olive oil

Instructions

    Peel and chop the sweet potatoes into chunks. Boil in a pot of water for 10-12 minutes until tender. Drain and let cool slightly.

    Mash the sweet potatoes in a large bowl.

    Drain the canned tuna and add it to the bowl with the mashed sweet potatoes.

    Add the egg, breadcrumbs, finely chopped green onions, garlic powder, salt, and black pepper to the bowl. Mix until well combined.

    Heat olive oil in a non-stick skillet over medium heat.
