Ingredients
For 4 servings
- 600 g chicken breast
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tbsp olive oil
- 50 g butter
- 250 ml heavy cream
- 100 g parmesan cheese
- 3 clove garlic
- 4 zucchini
- 2 tbsp fresh parsley
Instructions
- 1
Season the chicken breasts with salt and pepper on both sides.
- 2
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- 3
Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until fully cooked through.
- 4
Remove the chicken from the skillet and let it rest on a cutting board. Slice it into strips once slightly cooled.
- 5
In the same skillet, reduce the heat to medium and add the butter and remaining olive oil.
- 6
Add minced garlic and sauté for about 1 minute until fragrant.
- 7
Pour in the heavy cream and bring to a gentle simmer. Cook for about 3-4 minutes until slightly thickened.
- 8
Stir in the grated parmesan cheese until fully melted and the sauce is smooth.
- 9
Spiralize or julienne the zucchini into noodles.
- 10
Add zucchini noodles to the sauce in the skillet and toss to coat them thoroughly. Cook for 2-3 minutes until just tender.
- 11
Return the sliced chicken to the skillet, combining with the zucchini and sauce.
- 12
Garnish with chopped fresh parsley and serve immediately.
