Ingredients

- 1 cup chickpeas
- 2 cups rice
- 1 onion
- 2 cloves garlic
- 1 cup canned tomato
- 2 tablespoons vegetable oil
- 1 tablespoon curry powder
- 1 teaspoon salt
- 0.5 teaspoon pepper
- 3 cups water
- 1 stock cube

Rinse the chickpeas under cold water and set aside.

In a large pot, heat vegetable oil over medium heat.

Chop the onion and mince the garlic, then add them to the pot. Sauté for 3-4 minutes until soft.

Stir in the curry powder, salt, and pepper, and cook for another 1 minute until fragrant.

Add the canned tomatoes and chickpeas to the pot, stirring to combine.

Dissolve the stock cube in 1 cup of hot water, then add it to the pot. Simmer for 10 minutes.
