Ingredients

- 1 cup red lentils
- 2 cups white rice
- 1 onion
- 2 carrot
- 1 cup frozen peas
- 1 15 oz can canned diced tomatoes
- 2 tablespoons vegetable oil
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon ground turmeric
- 0.5 teaspoon ground paprika
- salt — to taste
- black pepper — to taste
- 3 cups water

Rinse the red lentils under cold water until the water runs clear and set aside.

Cook the rice according to package instructions and keep warm.

Peel and dice the onion and carrots. Mince the garlic cloves.

In a large pot, heat vegetable oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent.

Add the diced carrots and sauté for another 2 minutes.
