Ingredients

For 4 servings

  • 1 cup white rice
  • 1 can canned black beans
  • 1 can canned diced tomatoes
  • 1 onion
  • 1 bell pepper
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • salt — to taste
  • black pepper — to taste
  • 2 cups water

Instructions

  1. 1

Rinse and drain the white rice.

  2. 2

Dice the onion and bell pepper. Mince the garlic.

  3. 3

Heat olive oil in a large skillet over medium heat.

  4. 4

Add diced onion, bell pepper, and minced garlic to the skillet. Sauté until softened, about 3-4 minutes.

  5. 5

Add ground cumin and chili powder to the skillet, stirring for 1 minute until fragrant.

  6. 6

Stir in the rice and cook for 1 more minute, coating the rice with the spices.

  7. 7

Add canned black beans (drained and rinsed), canned diced tomatoes (with liquid), and water. Stir well to combine.

  8. 8

Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.

  9. 9

Season with salt and black pepper to taste.

  10. 10

Serve hot as a filling main dish.
