- 4 sweet potato
- 4 chicken breast
- 3 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 onion
- 1 bell pepper
- 1 cup cheddar cheese
- 1 cup milk
- 2 tablespoon flour
- 2 tablespoon butter
- 1 teaspoon thyme

Preheat the oven to 400°F (200°C).

Peel and cube the sweet potatoes. Place them on a baking sheet, drizzle with 1 tablespoon olive oil, sprinkle with 1/2 teaspoon salt and 1/2 teaspoon black pepper, tossing to coat evenly. Roast for 30 minutes or until tender.
