  • 2 cup cottage cheese
  • 4 cup baby spinach
  • 1 red bell pepper
  • 1 cup frozen corn
  • 1 can canned black beans
  • 2 tablespoon olive oil
  • 1 onion
  • 2 clove garlic
  • salt — to taste
  • black pepper — to taste
  • 1 teaspoon cumin
  • 2 green onions

Instructions

    Chop the onion, red bell pepper, and green onions. Mince the garlic.
