Ingredients
For 4 servings
- 500 g chicken breast
- 350 g penne pasta
- 2 tbsp olive oil
- 3 cloves garlic
- 150 g spinach
- 250 ml heavy cream
- 50 g parmesan cheese
- 1 onion
- salt — to taste
- black pepper — to taste
- 200 ml chicken broth
Instructions
- 1
Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente, then drain.
- 2
While the pasta is cooking, dice the chicken breast into bite-sized pieces. Mince the garlic and finely chop the onion.
- 3
In a large skillet over medium heat, add the olive oil. Add the diced chicken breast and cook until browned on all sides and fully cooked, about 8 minutes.
- 4
Remove the chicken from the skillet and set aside. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3 minutes.
- 5
Add the heavy cream and chicken broth to the skillet, stirring to combine. Bring to a gentle simmer.
- 6
Add the spinach to the sauce, stirring until wilted.
- 7
Return the cooked chicken to the skillet, combining it with the sauce and spinach. Season with salt and black pepper to taste.
- 8
Add the drained pasta to the skillet and toss everything together until the pasta is well coated with the sauce.
- 9
Stir in the grated parmesan cheese, mixing until it melts into the sauce. Serve immediately.
