Ingredients

For 4 servings

  • 600 g pork loin
  • 400 g canned kidney beans
  • 400 g canned black beans
  • 1 onion
  • 2 carrot
  • 2 celery stalk
  • 3 clove garlic
  • 2 tbsp olive oil
  • 4 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp paprika
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Dice the onion, carrots, and celery. Mince the garlic cloves.

  2. 2

Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, sautéing until the onion is translucent, about 3-4 minutes.

  3. 3

Add minced garlic, cooking for another minute until fragrant.

  4. 4

Cut the pork loin into bite-sized pieces and season with salt and pepper.

  5. 5

Push the sautéed vegetables to one side of the pot and add the pork loin pieces, cooking until browned on all sides, about 4-5 minutes.

  6. 6

Stir in the tomato paste, dried thyme, and paprika, cooking for 1 minute to combine flavors.

  7. 7

Add the chicken broth, canned kidney beans, and canned black beans. Bring the mixture to a boil.

  8. 8

Reduce heat to low and let the stew simmer for about 10 minutes, until the pork is cooked through.

  9. 9

Adjust seasoning with additional salt and pepper as needed before serving.
