  • 4 bell pepper
  • 2 cups cooked quinoa
  • 3 cups canned butter beans
  • 2 tablespoons olive oil
  • 1 onion
  • 3 cloves garlic
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt — to taste
  • black pepper — to taste
  • 2 tablespoons parsley

Instructions

    Preheat the oven to 375°F (190°C).

    Slice the tops off the bell peppers and remove the seeds and membranes.

    Place the bell peppers cut side up in a baking dish and set aside.
