Ingredients

  • 1 cup red lentils
  • 1 onion
  • 2 carrot
  • 2 potato
  • 1 can canned diced tomatoes
  • 1 vegetable stock cube
  • 4 cups water
  • 1 tablespoon sunflower oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the red lentils under cold water until the water runs clear. Set aside.

    Chop the onion, carrots, and potatoes into small cubes.

    In a large pot, heat the sunflower oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

    Add the carrots and potatoes to the pot and cook for another 5 minutes, stirring occasionally.

    Stir in the ground cumin and ground coriander, cooking for 1 minute until fragrant.
