Ingredients

- 1 cup red lentils
- 1 onion
- 2 carrot
- 2 potato
- 1 can canned diced tomatoes
- 1 vegetable stock cube
- 4 cups water
- 1 tablespoon sunflower oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- salt — to taste
- black pepper — to taste
Instructions

Rinse the red lentils under cold water until the water runs clear. Set aside.

Chop the onion, carrots, and potatoes into small cubes.

In a large pot, heat the sunflower oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
