Ingredients
For 4 servings
- 2 can canned tuna
- 300 g spaghetti
- 200 g fresh spinach
- 1 lemon
- 3 clove garlic
- 2 tbsp olive oil
- 1 tsp red chili flakes
- salt — to taste
- black pepper — to taste
Instructions
- 1
Cook spaghetti according to package instructions in a pot of salted boiling water until al dente; reserve 1/4 cup of the pasta water and drain the rest.
- 2
While pasta cooks, drain the canned tuna and set aside.
- 3
In a large skillet, heat olive oil over medium heat. Add minced garlic and chili flakes, sautéing until fragrant, about 1 minute.
- 4
Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
- 5
Add the drained tuna to the skillet, breaking it into chunks with a spatula.
- 6
Zest the lemon and then juice it. Add both the zest and juice to the skillet, stirring to combine.
- 7
Combine the cooked pasta with the tuna and spinach mixture in the skillet. Add reserved pasta water if needed to help distribute the sauce.
- 8
Season with salt and black pepper to taste, mixing well before serving.
