Ingredients

For 4 servings

  • 500 g prawns
  • 2 tbsp olive oil
  • 4 clove garlic
  • 1 red bell pepper
  • 2 zucchini
  • 1 onion
  • 100 g spinach
  • 2 tbsp lemon juice
  • 0.5 tsp red pepper flakes
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Peel and devein the prawns, ensuring to rinse them under cold water before patting dry with paper towels.

  2. 2

Mince the garlic cloves. Dice the red bell pepper and onion, and slice the zucchinis into half-moons.

  3. 3

In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.

  4. 4

Add the onions to the skillet and cook until they start to soften, about 2 minutes.

  5. 5

Add the bell pepper and zucchini to the skillet, cooking for another 3-4 minutes until the vegetables are tender yet crisp.

  6. 6

Push the vegetables to one side of the skillet and add the prawns to the other side. Season with salt, black pepper, and red pepper flakes. Cook the prawns for 2-3 minutes on each side until they are pink and opaque.

  7. 7

Stir everything together, add the spinach, and cook until wilted, about 1 minute.

  8. 8

Remove from heat and drizzle with lemon juice before serving.
