Ingredients

- 1 can chickpeas
- 1 cup quinoa
- 2 cups water
- 2 tablespoons miso paste
- 2 cups broccoli florets
- 1 red bell pepper
- 1 carrot
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 tablespoon ginger
- 2 green onions
- 1 tablespoon sesame seeds

Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.

Once quinoa is cooked, remove from heat and stir in miso paste until fully combined. Set aside.

Drain and rinse chickpeas. Chop broccoli into bite-sized pieces, slice red bell pepper and carrot into strips, mince garlic and ginger, and slice green onions.

In a large pan over medium heat, add olive oil. Sauté garlic and ginger for 1 minute until fragrant.

Add broccoli, red bell pepper, and carrot to the pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
