Ingredients

For 4 servings

  • 4 salmon fillet
  • 4 tablespoon white miso paste
  • 2 tablespoon honey
  • 2 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 cup quinoa
  • 2 cup water
  • 1 cup kimchi
  • 1 carrot
  • 1/4 cabbage
  • 2 green onion
  • 1 lime
  • 2 tablespoon sesame seeds

Instructions

  1. 1

Preheat the oven to 375°F (190°C).

  2. 2

In a small bowl, mix white miso paste, honey, soy sauce, and olive oil to create a glaze.

  3. 3

Place the salmon fillets on a baking sheet lined with parchment paper. Brush each fillet generously with the miso glaze.

  4. 4

Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  5. 5

Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy.

  6. 6

While the quinoa cooks, prepare the slaw by finely slicing the carrot and cabbage. Chop the green onions. In a large bowl, combine the carrot, cabbage, green onions, and kimchi. Squeeze the lime over the slaw and mix well.

  7. 7

Once the salmon is cooked and the quinoa is ready, serve each salmon fillet over a bed of quinoa with a side of kimchi slaw. Sprinkle sesame seeds over the top before serving.
