Ingredients

For 4 servings

  • 8 egg
  • 160 g frozen sweetcorn
  • 160 g bell pepper
  • 80 g cheddar cheese
  • 40 ml semi-skimmed milk
  • 5 ml olive oil
  • 15 ml water
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 320 g wholemeal bread
  • 400 g tomato

Instructions

  1. 1

All microwave timings are for a 1000-watt microwave. Grease four 350 ml microwave-safe mugs with the olive oil. Finely dice the pepper, discarding its stalk and seeds before weighing. Grate the cheddar, choosing cheese labelled suitable for vegetarians. Slice the tomatoes and divide them and the purchased ready-to-eat bread between four plates.

  2. 2

Put the pepper, frozen sweetcorn and water in a 1.5-litre microwave-safe bowl. Cover with a vented microwave-safe lid and microwave at 100% power for 2 minutes. Stir, rotate the bowl half a turn, then microwave at 100% for 1 minute. Continue in 30-second intervals, stirring between intervals, until the vegetables are tender and steaming throughout. Uncover carefully and let cool for 2 minutes.

  3. 3

Add the eight large eggs, milk, salt and black pepper to the vegetables. Beat gently with a fork until the yolks and whites are thoroughly combined, then stir in the cheddar. Divide evenly between the mugs, keeping each no more than two-thirds full. Refrigerate the mugs awaiting cooking.

  4. 4

Cook one mug at a time, covered with a vented microwave-safe cover. Microwave at 50% power for 1 minute 30 seconds. Stir gently from the outside toward the centre and rotate the mug half a turn. Microwave at 50% power for another 45 seconds, then continue in 30-second intervals at 50%, rotating between intervals, until the egg is set and a food thermometer reads at least 160°F/71°C in the centre and several other spots. Expect approximately 3–4 minutes of microwave time per mug.

  5. 5

Let each cooked mug stand covered for 2 minutes. Repeat the same cooking sequence with the remaining mugs, keeping completed mugs covered while you finish. Cooking all four sequentially takes approximately 16–20 minutes including handling and standing; the vegetable stage brings the total cooking-stage allowance to about 25 minutes.

  6. 6

Place one mug on each prepared plate and serve with the bread and sliced tomatoes. Handle the mugs carefully because their handles may be hot.
