Ingredients

  • 2 cups green lentils
  • 3 cups frozen mixed vegetables
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 3 tablespoons soy sauce
  • 1 teaspoon chili powder
  • 2 scallions
  • 4 cups water
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse and drain the lentils. Bring 4 cups of water to a boil in a pot. Add lentils and cook for about 15 minutes or until tender, then drain.

    While lentils are cooking, heat olive oil in a large skillet over medium-high heat.

    Mince the garlic and add it to the skillet, sautéing for 1 minute until fragrant.

    Add the frozen mixed vegetables to the skillet and stir-fry for about 5 minutes until heated through.

    Stir in the drained lentils, soy sauce, chili powder, salt, and black pepper. Cook for another 2-3 minutes, stirring occasionally.
