  • 1 cup quinoa
  • 2 cup water
  • 4 cup baby spinach
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the quinoa under cold water.

    In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until all water is absorbed.
