Ingredients

- 1 cup white rice
- 1 cup dry lentils
- 2 cups frozen mixed vegetables
- 1 onion
- 2 cloves garlic
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- salt — to taste
- black pepper — to taste
- 2 cups water

Rinse the lentils under cold water. In a pot, combine lentils and 2 cups of water, bring to a boil, then reduce heat to low and simmer for 15 minutes or until tender. Drain any excess water and set aside.

While the lentils cook, rinse the rice under cold water. In a separate pot, bring 2 cups of water to a boil, add the rice and a pinch of salt, cover, reduce heat to low, and cook for 10 minutes or until the rice is fully cooked and water is absorbed.

Chop the onion and mince the garlic. In a large pan, heat olive oil over medium heat. Add onion and garlic, sauté until the onion is translucent, about 3 minutes.

Add the frozen mixed vegetables to the pan, along with the cooked lentils. Stir in the ground cumin, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
