Ingredients

- 800 g chicken thigh
- 400 g canned black beans
- 500 g frozen mixed vegetables
- 1 onion
- 3 clove garlic
- 400 g canned diced tomatoes
- 200 ml chicken broth
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- salt — to taste
- black pepper — to taste
Instructions

Preheat the oven to 200°C (390°F).

Dice the onion and mince the garlic.

Heat olive oil in a large ovenproof skillet over medium heat.

Add the diced onion and minced garlic to the skillet and sauté until soft, about 3 minutes.

Add chicken thighs to the skillet and brown on both sides for about 5 minutes total. Remove from heat.

Drain and rinse the canned black beans.

Add beans, frozen mixed vegetables, canned diced tomatoes, chicken broth, dried oregano, dried thyme, salt, and pepper to the skillet with the chicken thighs.
