  • 1 cup red lentils
  • 2 carrot
  • 2 potato
  • 1 onion
  • 14.5 oz canned diced tomatoes
  • 1 cup frozen mixed vegetables
  • 2 clove garlic
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cup water

Instructions

    Rinse the red lentils under cold water and set aside.

    Peel and dice the carrots, potatoes, and onion.

    In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until soft and translucent.
