Ingredients

- 2 cups white rice
- 1 can canned lentils
- 2 cups frozen mixed vegetables
- 1 onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon ground cumin
- salt — to taste
- black pepper — to taste

Rinse the white rice under cold water. In a medium saucepan, combine rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover with a lid, and simmer for 15 minutes until water is absorbed. Remove from heat and let sit covered for 5 minutes.

While the rice is cooking, dice the onion and mince the garlic cloves.

In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and minced garlic. Sauté for 3-4 minutes until onions are translucent.
