- 2 cups green lentils
- 2 russet potatoes
- 2 tablespoons olive oil
- 1 onion
- 2 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt

- 2 cups spinach
- 2 cups vegetable broth
- 3 cups water

Peel and dice the russet potatoes.

In a large pot, combine lentils, diced potatoes, vegetable broth, and water. Bring to a boil over high heat, then reduce to a simmer and cook for 15 minutes until lentils and potatoes are tender.
