- 2 tablespoon olive oil
- 1 yellow onion
- 1 carrot
- 2 celery stalk
- 2 clove garlic
- 2 cup cooked lentils
- 14.5 ounce canned diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- salt — to taste
- black pepper — to taste

Cut the tops off of each bell pepper and remove the seeds and membranes. Place them upright in a baking dish.
