Ingredients

For 4 servings

  • 650 g chicken breast
  • 800 g potatoes
  • 200 g green bell pepper
  • 100 g onion
  • 2 tablespoon olive oil
  • 1.5 tablespoon salt-free Cajun seasoning
  • 0.5 teaspoon salt
  • 60 ml water

Instructions

  1. 1

Wash the potatoes and cut into bite-size pieces. Put the potatoes in a pot, cover with water, bring to a boil and cook for 12–15 minutes until tender. Drain, pat dry and halve any large pieces. Dice the pepper and onion. Cut the raw boneless, skinless chicken breast into strips no thicker than 1 cm.

  2. 2

Heat one deep 30 cm skillet over medium-high heat for 1 minute. Add the olive oil, potatoes, pepper and onion. Cook uncovered for 4 minutes, stirring occasionally.

  3. 3

Add the chicken, Cajun seasoning and salt. Pour in the 60 ml water and stir thoroughly. Cover, reduce to medium heat and cook for 6 minutes, stirring halfway through and replacing the lid promptly.

  4. 4

Uncover and increase to medium-high heat. Cook for 3 minutes, stirring frequently, until the liquid has evaporated and the seasonings cling to the chicken and potatoes. Check several of the thickest chicken strips with a food thermometer: they must reach 165°F/74°C before serving.

  5. 5

Divide the chicken, potatoes and vegetables evenly among four plates.
