Ingredients

For 4 servings

  • 500 g chicken breast
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 carrot
  • 200 g broccoli florets
  • 2 clove garlic
  • 1 tbsp ginger
  • 1 tbsp honey
  • 200 g rice
  • 400 ml water

Instructions

    Slice the chicken breasts into bite-sized pieces and coat with 1 tablespoon of soy sauce and cornstarch.

    Dice the red and green bell peppers and slice the carrot. Mince the garlic and ginger.

    Cook rice according to package instructions using 200 g of rice and 400 ml of water.

    Heat vegetable oil in a large pan over medium-high heat. Add chicken pieces and stir-fry until lightly browned and cooked through, about 5 minutes. Remove from pan and set aside.

    In the same pan, add the garlic and ginger. Stir-fry for 30 seconds until fragrant.

    Add the bell peppers, carrot, and broccoli to the pan. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

    Return the chicken to the pan, add remaining soy sauce and honey. Stir to combine and heat through for 1-2 minutes.
