Ingredients

- 400 grams extra firm tofu
- 3 tablespoons soy sauce
- 2 tablespoons cornstarch
- 3 tablespoons vegetable oil
- 2 cups broccoli florets
- 1 red bell pepper
- 1 carrot
- 1 cup snow peas
- 3 cloves garlic
- 1 tablespoon ginger
- 1 cup cashews
- 1 tablespoon sesame oil
- 2 green onions
- 2 cups rice

Press the tofu to remove excess water, then cut it into 1-inch cubes.

In a bowl, mix the tofu cubes with 2 tablespoons of soy sauce and 2 tablespoons of cornstarch until evenly coated.

Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 8-10 minutes. Remove the tofu from the pan and set aside.

Prepare the vegetables: cut the broccoli into small florets, slice the red bell pepper, and peel and julienne the carrot.

In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the broccoli, red bell pepper, carrot, and snow peas. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

Finely mince the garlic and ginger. Add them to the pan with the vegetables along with the remaining 1 tablespoon of soy sauce, and stir-fry for another 1 minute.
