- 2 tbsp olive oil
- 1 onion
- 2 carrot
- 2 celery stalk
- 3 clove garlic
- 400 g canned white beans
- 4 cup chicken broth
- 1 bay leaf
- 1 tsp thyme
- salt — to taste
- black pepper — to taste
- 2 tbsp parsley

Dice the onion, carrots, and celery. Mince the garlic.

Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook for 5-7 minutes until softened.
