Ingredients

  • 250 g spaghetti
  • 1 can canned white beans
  • 150 g spinach
  • 3 clove garlic
  • 2 tbsp butter
  • 1 tbsp olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Bring a large pot of salted water to a boil and cook spaghetti according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta.

    While pasta cooks, rinse and drain white beans. Mince the garlic.

    In a large pan, heat olive oil and butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add drained white beans to the pan and cook for 2-3 minutes, stirring occasionally.

    Add spinach to the pan and cook for another 2 minutes until just wilted.

    Reduce heat to low, add the drained spaghetti to the pan along with the reserved pasta water, and toss to combine. Season with salt and black pepper to taste before serving.
