- 1 onion
- 2 carrot
- 1 red bell pepper
- 3 cloves garlic
- 1 tablespoon ginger
- 1 can canned diced tomatoes
- 1 cup coconut milk
- 3 cups vegetable broth
- 2 tablespoons olive oil
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 4 cups spinach

Rinse the green lentils thoroughly under cold water and set aside.
