Ingredients

For 4 servings

  • 600 g potatoes
  • 200 g dried lentils
  • 1 onion
  • 2 carrot
  • 400 g canned diced tomatoes
  • 2 tbsp vegetable oil
  • 3 clove garlic
  • 1.5 liters water
  • 1 vegetable stock cube
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the dried lentils under cold water and set aside.

    Peel and dice the potatoes into small cubes. Finely chop the onion and garlic. Peel and slice the carrots.

    In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

    Add the diced potatoes and carrots to the pot and cook for another 5 minutes, stirring occasionally.

    Add the rinsed lentils, canned diced tomatoes with their juice, and water to the pot. Stir in the vegetable stock cube, dried thyme, and dried oregano.

    Bring the mixture to a boil, then lower the heat and let it simmer uncovered for about 25-30 minutes, or until the lentils and potatoes are tender.

    Season with salt and black pepper to taste. Serve hot.
