Ingredients

- 4 bell pepper
- 2 cups canned black beans
- 1 cup cooked brown rice
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 onion
- 2 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon chili powder
- salt — to taste
- black pepper — to taste
- 1 lime
- 1/4 cup fresh cilantro
Instructions

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

Place the bell peppers cut side up in a baking dish and drizzle with olive oil. Bake for 10 minutes.

Meanwhile, finely chop the onion and garlic.

In a skillet over medium heat, sauté the onion and garlic in a tablespoon of olive oil until the onion is translucent.
