Ingredients

For 4 servings

  • 4 sweet potato
  • 1 cup brown lentils
  • 3 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion
  • 3 cloves garlic
  • 2 carrot
  • 2 celery stalk
  • 1 15-ounce can canned tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • salt — to taste
  • black pepper — to taste
  • 2 tablespoons nutritional yeast
  • 2 tablespoons fresh parsley

Instructions

  1. 1

Preheat the oven to 375°F (190°C).

  2. 2

Peel and cube the sweet potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15 minutes, then drain.

  3. 3

While the sweet potatoes cook, rinse the lentils and place them in a saucepan with the vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 25 minutes until tender, then drain any excess liquid.

  4. 4

Heat olive oil in a large skillet over medium heat. Dice the onion and mince the garlic, then add to the skillet and sauté for 3 minutes until softened.

  5. 5

Chop the carrots and celery, then add them to the skillet. Sauté for another 5 minutes until they start to soften.

  6. 6

Add the canned tomatoes, cumin, paprika, thyme, salt, and black pepper to the vegetables. Stir in the cooked lentils. Simmer for 10 minutes to blend the flavors.

  7. 7

Mash the drained sweet potatoes with nutritional yeast, salt, and pepper to taste until smooth and creamy.

  8. 8

Spread the lentil mixture in a baking dish, then top with the mashed sweet potatoes, spreading them evenly.

  9. 9

Bake in the preheated oven for 30 minutes until the top is slightly golden and heated through.

  10. 10

Garnish with chopped fresh parsley before serving.
