Ingredients

- 2 sweet potato
- 1 cup red lentils
- 1 onion
- 2 cloves garlic
- 1 egg
- 1 cup bread crumbs
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 3 tablespoons olive oil
- 1 cup plain yogurt
- 0.5 lemon
- 0.25 cup fresh parsley

Peel and cube the sweet potatoes, and boil them in a pot of water for about 15 minutes or until tender. Drain and let them cool slightly.

Meanwhile, rinse and boil the red lentils in a separate pot for about 15 minutes or until soft. Drain and set aside.

Finely chop the onion and crush the garlic cloves.

In a large mixing bowl, mash the cooked sweet potatoes. Add the cooked lentils, chopped onion, crushed garlic, egg, bread crumbs, cumin, coriander, salt, and black pepper. Mix well to combine all ingredients.

Shape the mixture into patties, about 1/2 inch thick.

Heat olive oil in a large non-stick skillet over medium heat. Cook the fritters in batches for about 4-5 minutes on each side or until golden brown and crispy.
