Ingredients

For 4 servings

  • 400 grams pork loin
  • 2 zucchini
  • 2 egg
  • 50 grams all-purpose flour
  • 2 green onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil

Instructions

  1. 1

Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.

  2. 2

    Finely chop the green onions.

  3. 3

Cut the pork loin into small cubes.

  4. 4

In a large bowl, combine the pork, zucchini, eggs, flour, green onions, salt, pepper, and garlic powder. Mix until well combined.

  5. 5

Heat olive oil in a large non-stick pan over medium heat.

  6. 6

Scoop about 1/4 cup of the mixture into the pan, flattening slightly with a spatula. Cook for 3-4 minutes on each side, or until golden brown and cooked through.

  8. 8

Serve the fritters hot, garnished with extra green onions if desired.
