- 4 cod fillet
- 1 lemon
- 2 tablespoon olive oil
- 3 clove garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 red bell pepper
- 2 zucchini
- 1 red onion
- 200 gram cherry tomato
- 100 gram baby spinach

Preheat the oven to 400°F (200°C).

Juice the lemon and mince the garlic.

In a small bowl, mix lemon juice, olive oil, minced garlic, dried thyme, dried oregano, salt, and black pepper.

Cut the red bell peppers, zucchinis, and red onion into bite-sized pieces. Halve the cherry tomatoes.

On a large baking sheet, toss the cut vegetables (except spinach) with half of the lemon herb mixture.
