Ingredients

  • 2 cups white rice
  • 4 cups water
  • 3 eggs
  • 2 cups frozen mixed vegetables
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onion
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the white rice under cold water until it runs clear.

    In a medium saucepan, combine the rice with 4 cups of water and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed. Remove from heat, fluff with a fork, and let cool slightly.

    While the rice is cooking, heat 1 tablespoon of vegetable oil in a large skillet over medium heat.

    Crack the eggs into the skillet, season with a pinch of salt and black pepper, and scramble until fully cooked. Remove from skillet and set aside.
