Ingredients

- 3 cups edamame
- 2 carrot
- 1 onion
- 3 cloves garlic
- 1/2 cup all-purpose flour
- 2 tablespoons ground flaxseed
- 6 tablespoons water
- 3 tablespoons olive oil
- 1 can canned diced tomatoes
- 1/2 teaspoon red chili flakes
- salt — to taste
- black pepper — to taste
- 2 tablespoons lemon juice

Boil 3 cups of edamame for 5 minutes, then drain and set aside to cool slightly.

Grate 2 carrots and finely chop 1 onion and 3 cloves of garlic.

In a large bowl, mash the edamame until slightly chunky. Add grated carrots, chopped onion, and garlic. Mix well.

Add 1/2 cup all-purpose flour, 2 tablespoons ground flaxseed, and 6 tablespoons water to the edamame mixture. Season with salt and pepper to taste, then mix until combined.

Form the mixture into 8 patties.

Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat. Cook the patties for 3-4 minutes on each side until golden brown, adding more oil if necessary. Remove from skillet and set aside.

In the same skillet, add 1 tablespoon olive oil, then add 1 can of diced tomatoes and 1/2 teaspoon red chili flakes. Simmer for 5 minutes, season with salt, pepper, and 2 tablespoons lemon juice.
