Ingredients

For 4 servings

  • 1 cup brown lentils
  • 0.5 cup red split lentils
  • 2 carrot
  • 3 celery stalk
  • 1 onion
  • 3 clove garlic
  • 2 cup spinach
  • 6 cup vegetable broth
  • 2 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste
  • 1 teaspoon cumin
  • 1 bay leaf
  • 1 tablespoon lemon juice

Instructions

    Rinse the brown lentils and red split lentils under cold water; set aside.

    Chop the carrots, celery, and onion into small cubes. Mince the garlic cloves.

    In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent, about 3-4 minutes.

    Add the carrots and celery to the pot and sauté for another 5 minutes.

    Stir in the rinsed lentils, vegetable broth, cumin, bay leaf, salt, and black pepper. Bring to a boil.

    Reduce the heat to low, cover, and let simmer for 25-30 minutes until the lentils are tender.

    Add the spinach and cook for an additional 5 minutes until wilted.

    Remove the bay leaf, stir in the lemon juice, and adjust seasoning to taste.
