Ingredients

- 1 cup brown lentils
- 0.5 cup red split lentils
- 2 carrot
- 3 celery stalk
- 1 onion
- 3 clove garlic
- 2 cup spinach
- 6 cup vegetable broth
- 2 tablespoon olive oil
- salt — to taste
- black pepper — to taste
- 1 teaspoon cumin
- 1 bay leaf
- 1 tablespoon lemon juice
Instructions

Rinse the brown lentils and red split lentils under cold water; set aside.

Chop the carrots, celery, and onion into small cubes. Mince the garlic cloves.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent, about 3-4 minutes.

Add the carrots and celery to the pot and sauté for another 5 minutes.

Stir in the rinsed lentils, vegetable broth, cumin, bay leaf, salt, and black pepper. Bring to a boil.

Reduce the heat to low, cover, and let simmer for 25-30 minutes until the lentils are tender.
