Ingredients

For 4 servings

  • 800 g salmon fillet
  • 2 tbsp olive oil
  • 1 lime
  • 1 tsp garlic powder
  • salt — to taste
  • black pepper — to taste
  • 1 head bibb lettuce
  • 2 avocado
  • 0.5 red onion
  • 0.5 cup fresh cilantro

Instructions

  1. 1

    Preheat a non-stick skillet over medium-high heat.

  2. 2

Season the salmon fillets with salt, pepper, and garlic powder.

  3. 3

Add olive oil to the skillet and place salmon fillets skin-side down. Cook for about 4-5 minutes per side, or until cooked through and flakes easily with a fork.

  4. 4

While the salmon is cooking, dice the avocado and red onion, and chop the cilantro.

  5. 5

In a bowl, combine avocado, red onion, cilantro, and the juice of one lime. Stir to make the salsa.

  6. 6

Remove cooked salmon from the skillet and let it rest for a couple of minutes.

  7. 7

Separate the bibb lettuce into individual leaves, wash, and pat dry.

  8. 8

Flake the salmon into bite-sized pieces and distribute evenly across the lettuce leaves.

  9. 9

Top each lettuce leaf with a spoonful of avocado salsa.

  10. 10

Serve immediately as a fresh, low-carb wrap.
