Ingredients

- 400 grams firm tofu
- 4 tablespoons cornstarch
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 1 cup pineapple chunks
- 3 tablespoons apple cider vinegar
- 4 tablespoons ketchup
- 3 tablespoons brown sugar
- 2 cloves garlic
- 1 tablespoon ginger
- 1/2 cup water
- salt — to taste
- black pepper — to taste

Press and drain the tofu, then cut it into 1-inch cubes.

In a bowl, toss the tofu cubes with 2 tablespoons of cornstarch, soy sauce, salt, and black pepper.

Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the tofu and cook until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.

Chop the red and green bell peppers and onion into 1-inch pieces.

In the same pan, add 1 tablespoon of vegetable oil, then add the chopped bell peppers and onion. Stir-fry until slightly softened, about 5 minutes.

Add the pineapple chunks, minced garlic, and ginger. Stir-fry for an additional 2 minutes.

In a small bowl, whisk together apple cider vinegar, ketchup, brown sugar, and the remaining 2 tablespoons of cornstarch with 1/2 cup of water.
