For 4 servings

  • 2 cups chickpeas
  • 1 cup white rice
  • 1 carrot
  • 1 cup frozen peas
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil

  • black pepper — to taste
  • 1 teaspoon cumin

Instructions

  1. 1

Rinse and drain the chickpeas and set aside.

  2. 2

  5. 5

Stir in the rice and sauté for another 2 minutes to lightly toast.

  6. 6

Pour in the vegetable broth, add chickpeas, cumin, salt, and black pepper. Stir to combine.

  7. 7
