Ingredients

For 4 servings

  • 200 g rice noodles
  • 2 egg
  • 1 carrot
  • 1 bell pepper
  • 4 green onion
  • 2 clove garlic
  • 50 g peanut
  • 3 tablespoon soy sauce
  • 1 lime
  • 1 tablespoon brown sugar
  • 2 tablespoon vegetable oil
  • coriander — to taste

Instructions

  1. 1

Soak rice noodles in hot water for 8-10 minutes until softened, then drain.

  2. 2

While noodles soak, thinly slice the carrot and bell pepper, chop the green onions, and mince the garlic.

  3. 3

In a small bowl, mix soy sauce, lime juice, and brown sugar to create the sauce.

  4. 4

Heat vegetable oil in a large pan over medium heat. Add garlic and stir for 1 minute until fragrant.

  5. 5

Crack the eggs into the pan and scramble until just set, then add sliced vegetables and sauté for 3-4 minutes.

  6. 6

Add drained noodles to the pan and pour over the sauce, tossing to combine everything evenly.

  7. 7

Garnish with chopped peanuts, green onions, and fresh coriander before serving.
